Almond Raspberry Cookies

These cookies have wholesome, natural ingredients and make an excellent dessert or snack for kids.


1 cup almonds, ground in blender
1 cup gluten-free oats, ground in blender
1 cup spelt OR 1 cup gluten-free flour (I use Pamela's Pancake & Baking Mix)
1/2 teaspoon cinnamon
Pinch of salt
1/2 cup safflower oil
1/2 cup pure maple syrup (or brown rice syrup)
Raspberry all fruit jam


Combine the first 5 ingredients (almonds, oats, flour, cinnamon & salt) in a large mixing bowl, blending well.
Combine oil and syrup. Then add to flour mixture, stirring well.
Roll small amounts of dough in the palms of your hands into little balls and place on an ungreased cookie sheet. With your fingers make a small indentation in the center of each cookies and add about 1/2 teaspoon of raspberry jam.
Bake at 350 degrees for 15 minutes, until lightly browned.
